Oak barrels for fermenting and aging white wine. One barrel has the wooden end removed and replaced by a plexi glass sheet to allow inspection of the wine or must inside. Detail of the edge of the barrel where you can see the dead yeast cells that have fallen down to the bottom of the barrel.
When you do batonnage, stirring of the lees, this deposit is again put in suspension.

Stainless steel fermentation vats from above, removable tops for pigeage (punching down of the cap) and for inspection. Most stainless fermentation vats are closed-tops but sometime they have removable tops. This can improve colour and flavour extraction. (And make sure the wine does not look like, in american parlance, blush wine.)

Strutt your stuff

Hermitage growers are not shy of advertising their names. many have big signs, painted white and black, in the vineyards with their names.

Chapoutier and Jaboulet are the two most famous names. Both used to be owned by the founding families but a few years ago, due to succession issues I believe, Jaboulet was sold to the Frey family who are best known (in the wine world) for being a chateau owner in Bordeaux.

Today there are talks of making some kind of quality classification of the vineyards in Hermitage, but it is said that the big names are agains the idea since it might mean that they would have to take away their huge white name signs. (Although I don't quite see the logic.)

Cassis or cassis?

Cassis is a pretty fishing (well, before the tourist invasion) village on the French Riviera. Around the village they make a white wine AOC Cassis. It is also the French word for black currant liqueur, the one that makes Kir when blended with a white wine (preferably Bourgogne Aligote). The village and the wine is pronounced [kasi:'], without an ending 's', whereas the black currant syrup is pronounced [kasi's]. But even the French regularly makes mistakes with this.

A waiter in white coming with a tray of glasses with Kir aperitif bright red translucent, in motion blurred unsharp, colourful, made by mixing white wine, traditionally Burgundy Aligote, with black currant (called cassis in French) liqueur Cassis Cote d’Azur Var France Bouches du Rhone.
