Limoux - ancient wine, outdated rules

Limoux is a little known region in the southern Languedoc making both still wine and sparkling wine. It prides itself with having a sparkling wine that is made according to the "original" traditional method. Unfortunately, it also has a set of odd, almost bizarre AOC rules that seem to be a remnant of the past and which often makes its wines unreasonably expensive to make.
